Quick and Easy Weeknight Skillet Dinners

This is one of my go-to weeknight, didn’t plan, dinners. I almost always have enough ingredients on hand to whip up a delicious skillet. It’s easy to alter according to personal preference. My mom started making a version of these after enjoying them at Village Inn.

5-6 Potatoes
Canola or Olive Oil
1 Onion
1/2 Cup Bell Peppers
1 Tbs. Minced Garlic
1 Package Link Sausage
1 8 oz Container Sliced Mushrooms (optional)
1 12 oz. Bag Frozen Broccoli (optional)
1 12 oz. Bag Frozen Cauliflower (optional)

5-6 eggs

Peel and dice potatoes


Add oil to a large skillet, enough to coat the bottom of the pan. Begin heating.


Add diced potatoes to the skillet. Cook until the potatoes begin to brown.


While potatoes are cooking dice your onions, and bell peppers. Slice your sausage links.


Add onions, bell peppers, minced garlic, mushrooms, and sausage.


Cook, stirring occasionally until sausage is cooked and onions are translucent.


Add frozen veggies and continue cooking until heated through.

Serve with scrambled or fried eggs.

You could whip up some homemade bread to serve as toast for a great addition!
